The very versatile crock…

While my jury is still out on the insta-pot (because I’ve yet to try it), tis the season to break out those contraptions that allow for comfort food with ease.
Most people think of their crocks for savory items, like pulled pork, meatballs and the like, but I’ve got a few other ideas in addition to a favorite (and couldn’t be easier) taco chicken recipe!

Taco Chicken
3-4# chicken breast
16oz of your favorite salsa
That’s (pretty much) it…
Place chicken and salsa in crock pot.
Cook on low for 6-8 hours (or high for 3-4).
Shred with a fork.
Mix in sour cream to taste (if desired).
Allow to rewarm.
Serve on tortillas, over rice, etc!

Oatmeal
1c steel cut oats
4c liquid (milk/almond milk/eggnog/water)
If desired: 1/2c dried fruit; 1 TBSP chia seeds or ground flax seed
Butter sides and bottom of crock pot.
Pour liquid and oats (chia/flax) into crock.
Cook on low (OVERNIGHT!!) for 6-8 hours.
Stir and serve, adding nuts, more fruit and more liquid if desired.

Pumpkin Butter
15oz pumpkin puree
1/4c apple juice
1tsp cinnamon
1/2tsp nutmeg
1/2tsp ginger
1/4tsp cloves
Stir all ingredients in crock; cook on low for 5 hours, stirring occasionally.
Serve warm on PICK YOUR BISCUITS! ;)
