I know, it’s random, right? That January 25th would be Irish Coffee Day, but the interwebs said it, so it must be true!
We found a great recipe for some Irish Coffee Brownies, so we modified it a bit and will be sharing with the Afternoon Live audience today at 3, so tune into KATU then!
Irish Coffee Brownies
1 stick (1/2 c) butter, melted
3/4 c granulated sugar
1/4 c Bailey’s
2 tsp vanilla extract
Whisk all above ingredients.
3/4 c unsweetened cocoa
1/2 c flour (I used gluten free)
1-2 TBSP instant coffee granules
Optional: 1/2 c chocolate chips
Mix until just combined.
Spread into 8×8 pan lined with parchment or greased cupcake tin. Cook 15-20 mins at 350.
Mix whipping cream with a touch of baileys – top warm brownies and then drizzle with chocolate sauce (melt 1/2 c chocolate chips and mix with 1/2 c of – you guessed it – baileys)!
