Biscotti Bonanza!

Well, maybe not a bonanza per say, but we do love these little coffee/tea-approved cookies because not only are they delicious, they’re crazy easy to make – plus they are perfect gifts for guests, hosts, stockings, teachers…you name it!

Toffee Biscotti is the way we use up all the crumbles from our salted pistachio toffee!

3 cups flour
1.5 tsp baking powder
1/2 tsp salt
Whisk together

8 TBSP softened unsalted butter
3/4 cup sugar
Cream together
3 eggs (one at a time)
2 tsp vanilla
3/4 cup salted pistachio toffee crumbles

Split dough into two and flatten (onto parchment-lined sheet pan) into rectangular logs about 4 inches wide and 1 inch tall.
Bake at 350 for 20 mins.
Cool for 20 mins.
Cut into 1 inch strips and return to sheet pan on cut side.
Cook for 15 mins; flip to other cut side and cook 15 mins more.
